This easy and delicious meal is perfect for summer grilling. We present it as a main course but you can reduce the quantities to serve it as a side.
Yields 4 Servings Servings Quarter (1 Serving) Half (2 Servings) Default (4 Servings) Double (8 Servings) Triple (12 Servings)
3 oz or 90 grams of Mortadella per person sliced thick
1 Head of Radicchio, shredded
3 oz or 90 ml of Balsamic Vinegar
Shelled pistachios chopped medium
1 Heat the grill or a grill pan to medium-high.
2 Reduce the Balsamic Vinegar in a small saucepan by half, on medium heat, or until thickened. Remove from heat.
3 Grill the Mortadella slices until you get a nice char, but not to burn it!
4 Remove from heat, cut the mortadella into strips, and add the mortadella strips to a small or large salad of the shredded radicchio.
5 Drizzle with the balsamic reduction.
6 Sprinkle with the pistachios.
