Onion, chopped to your liking <\/span><\/div>\n<div itemprop=\"recipeIngredient\" class=\"cooked-single-ingredient cooked-ingredient cooked-ing-no-checkbox\"><span class=\"cooked-ing-amount\" data-decimal=\"2\">2<\/span> <span class=\"cooked-ing-measurement\">tbsp<\/span> <span class=\"cooked-ing-name\">Butter<\/span><\/div>\n<div itemprop=\"recipeIngredient\" class=\"cooked-single-ingredient cooked-ingredient cooked-ing-no-checkbox\"><span class=\"cooked-ing-amount\" data-decimal=\"1\">1<\/span> <span class=\"cooked-ing-measurement\">tbsp<\/span> <span class=\"cooked-ing-name\">Vegetable oil<\/span><\/div>\n<div itemprop=\"recipeIngredient\" class=\"cooked-single-ingredient cooked-ingredient cooked-ing-no-checkbox\"><span class=\"cooked-ing-amount\" data-decimal=\"12\">12<\/span> <span class=\"cooked-ing-measurement\">oz<\/span> <span class=\"cooked-ing-name\">or 340 g Italian sausage, cut into disks, or crumbled<\/span><\/div>\n<div itemprop=\"recipeIngredient\" class=\"cooked-single-ingredient cooked-ingredient cooked-ing-no-checkbox\"><span class=\"cooked-ing-amount\" data-decimal=\"0.25\">&#188;<\/span> <span class=\"cooked-ing-measurement\">cup<\/span> <span class=\"cooked-ing-name\">dry white wine<\/span><\/div>\n<div itemprop=\"recipeIngredient\" class=\"cooked-single-ingredient cooked-ingredient cooked-ing-no-checkbox\"><span class=\"cooked-ing-amount\" data-decimal=\"2\">2<\/span> <span class=\"cooked-ing-measurement\">cups<\/span> <span class=\"cooked-ing-name\">Arborio or Carnaroli Italian risotto rice <\/span><\/div>\n<div itemprop=\"recipeIngredient\" class=\"cooked-single-ingredient cooked-ingredient cooked-ing-no-checkbox\"><span class=\"cooked-ing-name\">Freshly ground black pepper<\/span><\/div>\n<div itemprop=\"recipeIngredient\" class=\"cooked-single-ingredient cooked-ingredient cooked-ing-no-checkbox\"><span class=\"cooked-ing-amount\" data-decimal=\"3\">3<\/span> <span class=\"cooked-ing-measurement\">tbsp<\/span> <span class=\"cooked-ing-name\">Freshly grated Parmigiano-Reggiano cheese<\/span><\/div>\n<\/div>\n<h3>Directions<\/h3>\n<div class=\"cooked-recipe-directions\">\n<div id=\"cooked-single-direction-step-\" class=\"cooked-single-direction cooked-direction\" data-step=\"Step 1\">\n<div class=\"cooked-dir-content\">\n<p>Bring the broth to a very slow, steady simmer.\u00a0<\/p>\n<\/div>\n<\/div>\n<div id=\"cooked-single-direction-step-\" class=\"cooked-single-direction cooked-direction\" data-step=\"Step 2\">\n<div class=\"cooked-dir-content\">\n<p>Add 1 tablespoon of butter, the vegetable oil, and the onions in large deep pot and heat medium-high. Cook and stir the onions until they are translucent, then add the sliced sausage. \u00a0Cook until the sausage is browned well and cooked through. Add the wine, stirring occasionally. When the wine has cooked off, add the rice, stirring constantly until the rice is coated well.\u00a0<\/p>\n<\/div>\n<\/div>\n<div id=\"cooked-single-direction-step-\" class=\"cooked-single-direction cooked-direction\" data-step=\"Step 3\">\n<div class=\"cooked-dir-content\">\n<p>Add a small ladle of the simmering broth and cook the rice, stirring constantly until all the liquid is gone. Make sure to clean the bottom of the pot or the rice will stick to it.\u00a0<\/p>\n<\/div>\n<\/div>\n<div id=\"cooked-single-direction-step-\" class=\"cooked-single-direction cooked-direction\" data-step=\"Step 4\">\n<div class=\"cooked-dir-content\">\n<p>When there is no more liquid in the pot, add another ladle of the broth and repeat the stirring process.\u00a0<\/p>\n<\/div>\n<\/div>\n<div id=\"cooked-single-direction-step-\" class=\"cooked-single-direction cooked-direction\" data-step=\"Step 5\">\n<div class=\"cooked-dir-content\">\n<p>Begin to taste the rice after about 15 minutes of cooking, reducing the amount of broth that you add towards the end so it does not get too runny.\u00a0<\/p>\n<\/div>\n<\/div>\n<div id=\"cooked-single-direction-step-\" class=\"cooked-single-direction cooked-direction\" data-step=\"Step 6\">\n<div class=\"cooked-dir-content\">\n<p>Cook the risotto until it is tender but firm.<\/p>\n<\/div>\n<\/div>\n<div id=\"cooked-single-direction-step-\" class=\"cooked-single-direction cooked-direction\" data-step=\"Step 7\">\n<div class=\"cooked-dir-content\">\n<p>Off heat, add freshly ground black pepper, the remaining tablespoon of butter, the grated Parmesan and stir.
